Last week I posted a Cosecha Sangria, a deliciously red mix of wine and fruit. Here’s a second sangria based on a classic Rioja. This one uses a different liqueur, Pom, the pomegranate liqueur. This is a sweet sangria, one that needs little time in the refrigerator to be ready to enjoy.
Again, I’ll suggest a specific wine to use. If you can’t find it, then ask your wine merchant for his best match. You do want true Rioja.
Rioja Sangria
Yield: serves 4
Ingredients:
1 bottle of 2007 Rioja from Sierra Cantabria
½ cup POM liqueur
1 cup sweet cherries, pitted and quartered
1 cup fresh strawberries, hulled and quartered
1 orange thinly sliced
Preparation:
Put the wine and liqueur in a glass pitcher and stir to mix. Add the fruits and mix. Cover the pitcher, put it in the refrigerator and stir occasionally. This sangria is drinkable after an hour’s chill. No sugar is added here: the POM liqueur adds all the sweetness you need.
