Sometimes I have cooking events for groups with medical issues requiring customized menus. One of those groups is for celiac patients. Celiac disease, an immune deficiency issue, was largely unknown until recently. Now, it is widely recognized and is the reason you have those gluten-free products in your supermarket. If you have celiac disease you cannot digest gluten or gluten products. It’s not just that you cannot digest them. Eating them can cause a variety of serious health issues.

So, celiac patients require a gluten-free menu. No wheat flour. For the most important part of the meal, dessert, that could have serious implications. We all love cookies, cakes and pies that often have flour as a key ingredient. Is celiac disease the end of great desserts?

By no means. These cookies are the equivalent of potato chips: you absolutely cannot eat just one. These cookies happen to be gluten-free but any and all will devour these thin, sweet, lovely morsels. Physically, they are just beautiful, reminding you of the classic lace cookies you may have seen in Scandinavian bakeries. We owe a big thanks to Laura Rebecca’s Kitchen for this recipe. Lace Cookies (Gluten Free)

Yield: 60 cookies

Ingredients:

  • 1½ cups uncooked regular oatmeal
  • 1½ cups light brown sugar
  • 2 tablespoons almond meal
  • ½ teaspoons salt
  • ⅔ cup melted butter
  • 1 egg, lightly beaten
  • ½ teaspoons vanilla

Preparation:

Preheat oven to 350°F degrees.

Line baking sheets with parchment paper.

Mix the oatmeal, sugar, flour, and salt in a bowl. Stir in the melted butter, then add the egg and vanilla and mix well.

Arrange the batter by half-teaspoonfuls on the sheet, about 2 inches apart on the baking sheets.

Bake until lightly browned, about 5 minutes.

Cool slightly and remove the cookies with a spatula as soon as they are firm. (If they become too hard, put them back in the oven for a moment to soften).

Once the cookies cool, place them gently in an airtight container or continue to the next step.
