This recipe calls for ripe peaches, enough to generate 1 ½ to 2 cups of peach slices. You could use frozen peaches and defrost this amount, but fresh is always preferred. It is August. High peach season. Stay away from your freezer. Loosen your tie. Go native.
Pure Frozen Peach Daiquiri
Yield: 2 cocktails
Ingredients:
- 2 medium-large ripe peaches, peeled and sliced [1 ½ to 2 cups net]
- Juice of 2 lemons
- 3 ounces of simple syrup
- 3 ounces of white rum
- 12 ice cubes, more or less depending on the texture of the frozen drink you prefer
Preparation:
Peel the peaches and cut into slices. You do need that net yield of 1 ½ to 2 cups. Put the slices in your blender. Add the lemon juice, simple syrup, and rum.
Blend until the peaches have turned to liquid. In one or two stages, add the ice cubes. Blend to achieve the consistency and chill factor you desire.
Serve in the glass of your choice.
