My wife likes whiskey. I like chocolate. And this weekend was cold, so I was energy low. And it was filled with football, so I was busy.
I wanted an easy dessert and I wanted to please Suzi. Here’s just solution form No-Bake Cookies by Camilla V. Saulsbury. I’m doing a TBT cookbook review of this emerald book on Thursday, but here’s a first treat: whiskey + chocolate. Oh, sugar, too. Of course.
You mix these up, cool them to set and enjoy. No baking. No baking at all.
Chocolate Whisky Balls
Yield: makes about 20 balls
Ingredients:
1 cup pecans
1 cup chocolate wafer cookie crumbs
1 ½ tablespoons light corn syrup
¼ cup whiskey
1 ½ cups powdered sugar, divided use
Preparation:
Grind the pecans and the chocolate wafers coarsely in a large food processor. Transfer mixture to a large bowl. Mix in corn syrup, whiskey, and 1 cup of the powdered sugar with wooden spoon or hands until well blended.
Place remaining ½ cup powdered sugar in shallow dish or bowl. Roll balls in powdered sugar; cover. Let stand 2 hours. If desired, roll again in additional powdered sugar. Chill up to 1 week or freeze up to 3 months.
