Yesterday I posted a cookbook review for Skinny Sippers, a volume of cocktail recipes with a twist [no pun intended]. Each of the recipes in Skinny Sippers gives you a lovely cocktail in under 150 calories. The recipes are dotted with ideas for using fruit, fruit and vegetables juices, and diet mixers to provide deep flavor without widening your waistline.

The book’s recipes can simply be followed. Or you can be inspired. This beverage is my extension of one recipe. I took the Valentine Martini — using raspberry vodka and muddled raspberries — and added one more berry layer. Dark raspberry Chambord provides a more intense flavor and definitely deeper color.

This is a beverage to just sit and sip. The strong raspberry flavor will contrast smartly with many nibbles, say cheese and crackers. So, a batch of these would surely be an appreciated introduction to a dinner party.


Triple Raspberry Treat

Yield: 2 cocktails

Ingredients:

  • 12 ripe raspberries, ideally fresh or thoroughly defrosted
  • 4 ounces raspberry vodka
  • Juice of one large lime
  • 1 ounce of simple syrup
  • 1 ounce of Chambord

Preparation:

Put the berries in the bottom of a cocktail shaker and muddle vigorously. Really, really mush the berries to extract as much liquid as possible.

Fill the cocktail shaker with ice and then add the remaining ingredients. Shake until well chilled. Srain, to avoid raspberry seeds, into cocktail glasses. Add crushed ice and enjoy.
