I have often suggested that simple syrup be incorporated in cocktails as a “hidden” but on so important component. Simple syrup can, for example, elevate a margarita from okay to superior.

Yes, your local bartender already knows and if you really, really love his margaritas, I’ll wager his secret ingredient is simple syrup.

To put some zing in the “simple” here is a Jalapeno Simple Syrup. I do taste this in a cocktail last week and I will share that recipe once I have untangled how to reconstruct it. But, but all by itself this is a really good idea all by itself.

Please, you are going to make this? Start with one, just one, jalapeno. You have no idea. Trust me.


Jalapeno Simple Syrup

Yield: 1+ cup

Ingredients:

  • 1 cup sugar
  • 1 cup water
  • 1 jalapeno, ends cut off, quarter lengthwise, seeds and ribs removed

Preparation:

Add the sugar and water to a sauce pan, stir to mix a bit, then put the heat on medium high. Once the sugar has dissolved, add the jalapeno. Bring to a boil, simmer for 10 minutes. Turn the heat off, allow to steep for 10-60 minutes. The flavor will intensify over time so you may want to taste test.

Ah, I said the jalapeno should have the seeds and stems removed and my photo shows them still hanging in there. I happen to like the look of the seeds and ribs and, yes, you can add them to the mix.More heat.

Allow to cool to room temperature. Stain into a container and refrigerate.
