In Rise and Shine: Better Breakfasts for Busy Mornings, author Katie Sullivan Morford lays out a game plan for a grand day. Make breakfast special. And special does not have to be hard. It can even be a little “desserty” like this pomegranate sundae. No ice cream in this sundae, that’s true. It’s plain yogurt made special with strawberry jam, tangerines and the crunch of pomegranate seeds. Bright and yummy!


Pretty Pomegranate Sundaes

Yield: serves 2

Ingredients:

  • 1 ½ cups plain Greek yogurt
  • 1 to 2 tablespoons strawberry jam
  • 3 small seedless tangerines, peeled
  • ⅓ cup pomegranate seeds

Preparation:

Divide the yogurt between 2 small bowls or ice cream dishes.

Put the jam in a small ramekin or glass bowl and microwave on high for 10 seconds. Pour the jam over the yogurt. Lay the tangerines on their sides and use a serrated knife to cut them into Vi-inch-thick slices. Pull the segments apart and scatter over the yogurt. Top with the pomegranate seeds.
