For many of us, rice is a dish we rarely eat — unless we are at a Chinese restaurant. And it often considered a “heavy” dish, one not ideal for warm summer nights.

Yet, just the opposite is true. We could all enjoy rice more and summer offers great opportunities to make lovely rice dishes.

This photo shows a Summer Vegetable Rice that is a composed dish. You cook the rice first. Then sauté summer vegetables. Finally, stir to combine. You can serve warm right then or cold the next day.

What veggies? Carrots, sweet potatoes, zucchini, onions, scallion, peppers, plus torn leaves of basil. Just dice up those veggies, cook with some good olive oil, add salt and pepper, toss in the basil, leaves, and you are ready to mix, stir and enjoy.
