In the summer, we take out Pie by Ken Haedrich, put it on the kitchen island, and check it out day by day. Ken has a recipe for All-Strawberry Pie calling for 4 cups of strawberries.
The great thing about pie making is the flexibility of those fillings. We had a cup of strawberries. Two cups of blueberries. And a mound of peaches. We improvised. The result was a summer fruit pie of substance, color, and flavor. We’ll never make a pie that tastes quite the same again, but we won’t forget this one.
When making a lattice top, Suzi and I partner. Four hands are much better than two. Then she brushes the pie with heavy cream before baking. As you can see, that cream kept the lattice work lighter than the outer crust. We did not “cream” that border enough. What can we do? Make another pie.
